So, after nearly two weeks on a solo road trip (2016) from Madrid to Toledo to Ubeda to Sabiote to Granada and Cordoba and then Sevilla, I was TIRED. But once there, I rallied. I spent a few amazing days, early morning to late at night — never mind the scalding heat — seeing all that Sevilla could offer: restaurants, bars, flamenco, the Jewish quarter, the bullfight museum, Casa de Pilatos, the Réal Alcazar (palace), el Plaza de Toros, the gorgeous cathedral, Mercado de Triana (of course), and more.

Seven years ago, Chef Manuela Monsalve-Ruiz of Sabiote, Spain and Chef Roger X. Navas-Balladares of Los Angeles, Calif. met during the inaugural season of Canal Sur's Los Descendientes. At Juan Molina-Martínez's Cortijo del Espíritu Santo, Ubeda, Spain, they bonded over tapas, and have remained friends since.
